Fall is here! Fall is here!!! This is everyone’s favorite time of year and there are so many fun and tasty things to do!!!  I have dusted off the picnic basket and given my hubby fair warning that we will be going on many picnics this year. Nothing is more pleasurable to me than a nice shady spot in the warm Autumn sun with a great bottle of wine and tasty morsels all spread on a blanket.  I am totally sure that these cookies will be attending our first picnic. I am obsessed with these amazing cookies.  I first saw them on Pinterest Here from Parent Pretty Blog and I knew that I must have these.

I have made a few changes from the original recipe by changing up the spices to resemble a Pumpkin Pie flavor and the frosting is quite a bit different in my recipe. Let me just say that these cookies Deliver Big Time!!They are the best cookie I have had in my mouth all year!!!  The addition of cloves really makes the difference.  What I really love about these cookies are how light and airy they are.

This comes from using very soft butter and then whipping air in while creaming with the sugar.  The pumpkin also helps to keep the dough light. Please take heed and do not skip the step of properly chilling your dough.  Cookies always bake up better when the dough is chilled.  When you use such soft butter chilling is required unless you want flat messy gooey cookies.  So please really CHILL your dough. Pumpkin Pie Cookies with Brown Sugar Frosting

These cookies are a recipe inspired by a Better Homes and Gardens recipe on Parent Pretty Blog.

Ingredients

  • 1 cup super soft butter
  • 1 cup sugar
  • 1 tsp Baking POWDER and SODA
  • 1/2 tsp salt
  • 1/8 tsp cloves
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 egg
  • 1 tsp vanilla
  • 1/2 can of pumpkin puree
  • 2 cups flour
  • for the frosting:
  • 1/2 cup soft butter
  • 1/2 cup firmly packed brown sugar
  • 1 tbs vanilla
  • 1 cup powdered sugar

Instructions

  • cream butter and sugar on high in mixer for 3 min till a light whipped consistency
  • reduce spped to low andadd in the next 6 ingredients and combine
  • add egg combine fully
  • add in vanilla
  • add pumpkin and increase speed to medium to help whip pumpkin in
  • reduce speed to low and add in flour
  • chill dough 3 hours to overnight
  • preheat oven to 350
  • make even tablespoon or larger sized dough balls on cookie sheet
  • bake 9-11 min
  • cool completely before frosting
  • for the frosting:
  • cream the butter and brown sugar till light and creamy
  • add in the vanilla
  • mix in the flour
  • frost cookies and sprinkle a bit of cinnamon on top
  • Enjoy!!
