Corn Dog Muffins, what is this you ask….. Well I will tell you that they are about just the most perfectly portable perfectly poppable food!  You know when you go to the Fair and you can’t wait to over indulge in all the wonderfully greasy yummy food?  Well that hot dog that has been dipped in cornmeal batter and fried to perfection is just about everyone’s favorite treat!  These muffins were inspired by the County Fair speciality!  All the flavor none of the grease!

Bursting with hot dogs and sweet corn bread and just a touch of green chiles for a little pop of fun!  You won’t feel guilty for indulging in one of these tasty treats.  Want to make it even less guilty feeling? Use turkey or soy hot dogs!  I used our family favorite of Nathan’s Hot Dogs.  Really any brand would be just fine.  I love that when they first pop out of the oven they have this way of looking just like an ordinary corn muffin.

Why this is no ordinary corn muffin at all!!!

This is a meal in itself!  Hungry kids home from school and dinner is still hours away? Corn Dog Muffins.

Your child forgot to tell you that she needs a snack for 28 kids tomorrow? Corn Dog Muffins.

Headed to the game and you want to bring a quick bite to eat in the stands? Corn Dog Muffins.

I think you can see the pattern here. These little guys might just be the easiest go to snack and small meal you ever make!  Literally 3 ingredients.

  • 1 box Jiffy corn muffin mix
  • 1 egg
  • 1/2 cup of milk
  • 5-6 hot dogs sliced
  • 1 4oz can of green chiles


  • Preheat oven to 400
  • line a muffin tin with 6 cupcake holders
  • in a mixing bowl combine all ingredients
  • even pour the batter into the six muffins
  • Bake for 20-25 min or until set and tops are golden brown.
  • You can easily double or triple this recipe
