You know when you go to the Fair and you can’t wait to over indulge in all the wonderfully greasy yummy food? Well that hot dog that has been dipped in cornmeal batter and fried to perfection is just about everyone’s favorite treat! These muffins were inspired by the County Fair speciality! All the flavor none of the grease!
Bursting with hot dogs and sweet corn bread and just a touch of green chiles for a little pop of fun! You won’t feel guilty for indulging in one of these tasty treats. Want to make it even less guilty feeling? Use turkey or soy hot dogs! I used our family favorite of Nathan’s Hot Dogs. Really any brand would be just fine. I love that when they first pop out of the oven they have this way of looking just like an ordinary corn muffin.
