Happy Tuesday!  I know that we are all busy getting ready for the big day.  Thanksgiving is only 2 days away and I am sure that the cooking has already started.  Just in case you were needing a dessert I have a great and super easy Bundt Cake for you.

Last year I made an Egg Nog Bundt Cake and it was so good that I had to reinvent it again for Thanksgiving this year.  When you have a hit you have to keep working at making better and better.

That’s just what I did!

The cake is made with pudding!  It is what makes it so dense and amazingly moist.  I used  Jello Pumpkin Spice Instant Pudding Mix. Mixed with the chocolate it has the most wonderful bite of spice smoothed out with luscious chocolate.

Of course you know how much I love frosting, glaze, ganache, basically anything sweet that tops off a cake or cookie drives me wild.  This ganache was thick and rich and so delectable!

Rich Dutch Cocoa, Pumpkin Pie Spice, and heavy cream.  Need I say more? Just take a look.

I know that you are drooling a little bit now aren’t you?  Well if you are you can taste a bite of this cake in just over an hour.  I bet you have all the ingredients in your pantry right now.  Maybe you don’t have Pumpkin Spice Instant Pudding but I am sure you have chocolate. {an easy substitute.  Although I highly recommend using the pumpkin}

I wish I had some of this cake left! I am jonesing for some right about now!

Chocolate Pumpkin Bundt with Chocolate Pumpkin Ganache

This is a Plaid and Paisley Original Recipe. Please feel free to bake and share! All photos and content are copyrighted.

Ingredients

  • 1 box chocolate cake mix
  • 1 package Jello instant pumpkin pie spice pudding (3.9 oz box) this is what makes the cake dense
  • 4 eggs
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 tsp chocolate or vanilla extract
  • For the Ganache:
  • 1/2 cup Dutch Processed Cocoa
  • 1/2 tsp chocolate or vanilla extract
  • 1 tsp pumpkin pie spice
  • 4 tsp heavy cream

Instructions

  • preheat oven to 350
  • spray a bundt pan with non stick spray
  • in a mixing bowl combine all the cake ingredients and mix on med speed for 2 min
  • the batter will become very thick
  • pour batter evenly into prepared pan
  • Bake for 40 min or until a toothpick comes out clean
  • cool on wire rack for 15 min then turn the cake upside down to release from pan
  • let cool completely
  • to make the ganache:
  • mix all the ganache ingredients
  • then with a spoon pour over cake letting it drip down the sides

    In the narrative about the ganache, you mentioned pumpkin pie spice along with the cocoa and heavy cream, but I don’t see it included in the list of ingredients for the ganache. Sounds wonderful, though, and I can’t wait to try it.

      Hi Susan I am so sorry about the delay in responding to you. I have been on vacation and am now just reading comments. I must have overlooked that and thank you for bringing this to my attention. If you really want a big pumpkin pie taste in the ganache then use 1 tsp of pumpkin pie spice. If you just want a hint of taste use 1/2 tsp.

      Oh My!!! I left out how long to bake it for! Thank you so much for pointing this out to me!!! You bake it for 40 min or until a toothpick comes out clean!!!
