You are going to love these flavorful Chicken Burritos for dinner tonight!  With all the parties and activites the Holiday’s bring us, it is nice to sit down to a regular family dinner with one of your favorite meals.  Chicken Burritos are easy and quick to make!

Made in the Slow Cooker with just a quick turn in the oven for melty cheesy goodness!It’s cold and blustery outside right now.  We are in Holiday High Gear! Busy days and nights just got busier and it’s not always so easy to find time to sit down at the dinner table as family and have a nice hot meal.  Chicken Burritos are a family favorite and a snap to make!

You can make my Crock-Pot Perfect Mexican Shredded Chicken as the meat for Chicken Burritos or use any leftover chicken that you have.  Rotisserie would be great and this time of year there is no shortage of leftover turkey!

Made in the Slow Cooker with just a quick turn in the oven for melty cheesy goodness!I love finding new ways to make dinner easy and tasty.  Mexican food is the all time favorite around The Plaid & Paisley Kitchen.  I have a very strong feeling that it is one of yours also.  One of the easiest ways to make spicy shredded chicken is in the slow cooker.  I have a great and easy recipe that I used in these photos.

If you want an even easier way to make these burritos, you can pick up a rotisserie chicken.  Just pull all the meat off the bones and throw the skin away. {unless you just want a snack}  In a skillet toss the pulled chicken and a package of taco seasoning over medium high for 3 min or until heated through.

You can do this same thing with leftover chicken or turkey.  What’s really good about these burritos is that you can use any meat that you like really.  Ground beef and taco seasoning, leftover pot roast, even pulled bbq pork would be amazing in a burrito!

Chicken Burritos

Ingredients

  • 1 recipe of {Crock-Pot Perfect Mexican Shredded ChickenI http://www.pandpkitchen.com/crock-pot-perfect-mexican-shredded-chicken/}
  • or leftover chicken, turkey or rotisserie chicken {toss them with a package of taco seasoning over medium high heat 3 min}
  • 1 14 oz can of enchilada sauce
  • 1 10 oz can of fire roasted tomatoes drained
  • 6-8 flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • sour cream and green onion for garnish

Instructions

  1. preheat oven to 350
  2. in a bowl mix the enchilada sauce and fire roasted tomatoes
  3. pour approx 1 cup of the mixture and spread in the bottom of a 9 x 13 baking dish
  4. take each flour tortillas and spread a little cheese and chicken down the middle of each
  5. roll up and place seam side down in the baking dish
  6. pour the rest of the sauce over the top and sprinkle the rest of the cheese
  7. bake for 20 min or until heated through and cheese is all melty good
  8. serve with sour cream and any other toppings you want
  9. keeps in an airtight container in the fridge for 4 days
  10. makes 6-8 servings
