I seem to go through phases here at the P and P Kitchen.  I will have a few savory dishes in a row then a bunch of sweet treats for you. I am in my sweet tooth phase right now.  I have a very physical and sometimes very stressful job and chocolate cake is never far from my mind due to this.

Chocolate Cake and a Martini that is!

I can say that I used a much healthier cooking oil in this than just plain ole Vegetable oil.  At BlogHer Food I met the fun gals at Pompeian who turned me on to their Mediterranean Blend Oil.  Who knew you could slip Omega-3 into Chocolate Cake?!

{You know what a good time at the conference was, when none of us can stop talking about it}

Pompeian gave me an amazing chocolate chip cookie made with the Mediterranean Blend Oil.  I was IMPRESSED!  So when I made this cake I exchanged my vegetable oil for the Canola, Extra Virgin Olive, and Grapeseed Oil blend.  It has 850mg of Omega-3 in every serving!!!

Now I have to admit I have yet to find a replacement for Butter in my Frosting recipes but at least the cake is healthy right?

Look at how pretty and pink that cherry flavored frosting is! I think we can forgive it for being so sweet and creamy can’t we? My favorite ingredient in this cake is the entire jar of Maraschino cherries all cut up and in every bite of cake!

That is EVERY Bite! Chocolate and Cherries were made to go together!

The fun part of this cake? Oh that would be the Cherry Coke!!! Of all the Coca Cola flavors Cherry is my favorite!  Oh and it is the Cherry Coke Zero.  That is one more healthy aspect to this cake!!

You can use any flavored Soda Pop for this cake. I just really really like Cherry Coke Zero!!! Recipe adapted from Betty Crocker


  • 1 box Dark Chocolate Cake Mix
  • 1 jar {10oz} of Maraschino Cherries chopped plus the liquid 1/4 cup plus 3 tbs divided
  • 1 cup Cherry Coke Zero Soda Pop
  • 1/2 cup Pompeian Mediterranean Blend Oil
  • 3 eggs
  • For the Frosting
  • 1 Cup {2 Sticks} Butter
  • 4 cups Powdered Sugar
  • 1-2 tbs Maraschino Cherry Liquid
  • 1 tsp Almond flavoring


  • Preheat oven to 350
  • grease and flour a 9 x 13 baking dish
  • in a mixing bowl combine the cake mix, oil, eggs blend on medium high for 2 min
  • gently pour in the cherry coke and blend on low
  • fold in the cherries and 1/4 cup cherry liquid
  • pour into prepared baking dish and bake for 30 min or until done
  • cool completely before frosting
  • For the frosting:
  • In a mixer with the paddle attachment
  • blend butter and powdered sugar
  • add in the 2-3 tbs cherry liquid and the 1 tsp almond flavoring
  • beat until very smooth and spreadable
  • frost the cake and make fun patterns in the frosting with a spoon or knife
  • Enjoy!!!
