Can I just tell you how Crazy my last 3 weeks at work have been? Well this will give you a hint… 9 days in a row worked, then the past 2 weeks have both been 6 day work weeks with extended hours each day.  Today was a RARE day off that required no working! Yippee!!! This is what happens when your store usually has 4 managers and you are down to only 1 {me} and a trainee.  Boy oh Boy! So there has not been much blogging activity here at The P and P Kitchen for the past week or so.  Today I took some time for myself and went to Comic Con! Pretty Easter Caramel Popcorn

This has been such a crazy month! St. Patrick’s Day and Easter all in the same month! Not that I mind really, I love any excuse to party or decorate.  Now we just need the weather to co-operate.  Last Friday 79 and Sunny the most beautiful day of the year.  The very next day 36 cold, grey, rainy…… That’s March for you. Now one thing that you can count on is that this caramel popcorn is the best that you will ever taste! I love Caramel Corn and I love Gorp. Now I love Gorp and Caramel Corn combined even better!! Really this is a treat that you can make anytime and it will always be a big hit! I saw this first at Two Peas & Their Pod and it was love at first sight! I knew straight away that this was going on my Easter baking list. I love how thick and chewy the caramel is and the salt from the pretzels just takes this to that next level. Oh and who could forget the Peanut M&M’s? They just put this over the top in that crazy good it’s so addictive category!

This is really easy to make, but there is one word of wisdom that I would pass on to you.  Use Non Stick Spray on everything that the caramel is going to touch.  That is the spoon, the spatula, your hands and most importantly the Bowl you mix this in! This is a Very Sticky Process! I do mean Sticky! You will be so glad at the taste of this though, when you are eating it you won’t care if you have Caramel on every surface of the kitchen {including a glob in your hair! no kidding I did this} Look at how pretty this is with the Pastel Colored M&M’s and that perfect Caramel color.

Need a treat to take to a party or to class with the kiddo’s? Then this is your perfect find.  Crowd pleasing and easy on the checkbook. I just used a bad of fat free microwave popcorn.  Oh just make sure that you pick out all the unpopped kernels.  Not good for teeth to chomp down on one of those.

Pretty Easter Caramel Popcorn

Ingredients

  • 1 bag fat free no butter microwave popcorn popped kernels removed
  • 2 cups coarsely chopped salted pretzels
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/3 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 cup miniature marshmallows
  • 1 cup M&M's

Instructions

  • In a medium saucepan, bring sugar and water to a boil over medium high heat. Boil, undisturbed, until mixture is amber in color, for about 8-12 minutes. Remove pan from heat and slowly pour in the heavy cream. It will seem as if it is going to seize but keep stirring the heat will do it's job. Stir until smooth and add vanilla extract, marshmallows. Stir until marshmallows are melted and mixture is smooth.
  • 2. Spray your Mixing bowl and spoon/spatula with nonstick spray. In the mixing bowl combine popcorn and pretzels. Pour caramel mixture over and gently stir until popcorn is well coated. Stir in the M&M's. Transfer mixture to a large baking sheet that has been sprayed. Let cool completely.
  • 3. Once cool break up into bite sized pieces
  • Enjoy!

The Best St. Patrick’s Day Cocktails

Top O’ The Mornin’ To You! Is 7 am too early for you to think of Cocktails? Well you know what they say…. It’s 5 o’clock Somewhere! Right now it’s 5 in Irish terms! It’s St. Patrick’s Day Weekend!!! Let’s start this party off right! I have three of my favorite St. Paddy’s Day Cocktail recipies for you and a round up of some of the Best of the Blogs! So about these Thin Mint and Dublin Shots…..

The Classic Flavor of St. Paddy’s Day treats is Mint.  What is the quintessential mint flavor? Girl Scout Cookie Thin Mints of course! So what could possibly be the best accompaniment to this cookie other than booze that tastes exactly like the cookie?  Hands down I bet drink about 12 of these over the weekend! So what is this wonderful Libation? Well it is equal parts Creme de Menthe and Creme de Cacao and it is chocolatey minty heaven!

Now for the Dublin Shot

Where is the most famous city in Ireland? You guessed it DUBLIN!   So how could I not do a Drink in honor of this most Irish of cities? Well I can’t. I just can’t! So here it is in all it’s Splendor.  To Make this Dublin Shot take equal parts Bailey’s Cream and Coffee flavored Brandy! These drinks can really stand on their own, but the best thing with these is when they are served together!

For my Third Lovely Treat I have the Classic Black Velvet for you

I didn’t think I was going to like this one but Oh Boy Was I Wrong! I loved it!!!! I am not a beer drinker but I do like a Stout every now and then.  So when I remembered this Drink I thought Hmmmmm Champagne and Stout? What does that taste like? Fabulous I tell you Fabulous!! The Champagne takes the bite out of the beer and mellows it perfectly.

To Make this just pour a half a glass of Stout and then top off with the Champagne.  The Champagne will kill the head so if you want the head put the Champagne in first.

Hello Everyone!

If you live in the Mid West I hope that you have cleared some snow and have stayed warm! Well if anyone has had harsh weather I hope that you all are doing ok! My poor little doggies are the ones that have had the worst time with it.  They sink in it.  Some spots are so deep it swallows them whole! We have dug what we call a “potty patch” but they miss roaming around the whole yard. Hopefully we will get some melt this week. Although I think the huge mounds that look like glaciers will still be here in May!!

Chili Tot Casserole

Here is another easy throw together Party Food or even a fun lunch or dinner.  You are just now getting to see all my Super Bowl Food that I made.  Some holiday full of hearts and flowers kinda got in the way. This is total guy and total kid food! {Read so not healthy but oh so good!} This casserole has 4 layers of total yum! There is a corn chip crust, chili, tater tots and then topped off with ooey gooey cheese! Hmmmmm you must be thinking.  I know I am just remembering how good it was.  If you make this as a party food serve it with extra corn chips as a hearty dip.  If it is for lunch or dinner just dig in with a fork and go for it.  I guess you could do that for the party food too.  It really is that good! Just take a look

Do you see what I mean about being fork ready? I am ready to jump into the computer so I can have some more.  Really what more does a busy mom want than quick and easy and totally kid and husband approved? This was Super Bowl Food after all.  You can make this a big or a small as you want just adjust the amounts of the totally accessible ingredients as needed.

Ready to dig in? I know I am!

Chili Tot Casserole

Chili Tot Casserole

Ingredients

  • 1 bag of corn chips like Frito's
  • 2 -3 cans of Wolf Chili NO BEANS (unless you want beans)
  • 1/2 a bag of tater tots
  • 1/2 to 1 cup shredded cheddar cheese

Instructions

  • preheat oven to 400
  • spray an 8x8 or whatever size dish you are using with non stick spray
  • crush corn chips enough to cover bottom of pan
  • spoon and spread the chili over the chips
  • layer the tater tots on top
  • sprinkle with cheese
  • bake for 20-30 min
  • Serve with more corn chips if desired
  • Enjoy!
