Everyone loves the classic combination of cake and ice cream!  Now I give you cake ice cream!  I first made this a few years ago and it was such a hit that I just had to make it again.  We are big carrot cake fans here.  Who doesn’t love that moist spicy cake with juicy raisins and real carrots?

Carrot Cake Ice Cream

Ingredients

  • 1 box mix of your favorite carrot cake mix (use one with raisins and real carrot for best results)
  • 1 half gallon vanilla bean ice cream

Instructions

  1. make cake mix according to directions in a 9x13 pan
  2. let cool completely
  3. while cake is cooling bring the ice cream out of the freezer and let soften
  4. once cake is cool crumble into a large mixing bowl
  5. add softened ice cream to bowl and mix to combine
  6. put ice cream mixture in a loaf pan and wrap tightly with plastic wrap
  7. place in the freezer for 3 hrs

  2. This looks so delicious! I haven’t yet attempted to make a carrot cake from scratch (I dunno…it’s intimidating!) so I was afraid you’d make me bake one then squish it into the ice cream. I’m so happy I can use a box mix haha! I can’t wait to try this. And since you asked, I think a coconut cake + vanilla ice cream will taste good too :)
