Everyone loves the classic combination of cake and ice cream! Now I give you cake ice cream! I first made this a few years ago and it was such a hit that I just had to make it again. We are big carrot cake fans here. Who doesn’t love that moist spicy cake with juicy raisins and real carrots?
This Carrot Cake Ice Cream has only two steps! That’s right two steps! I told you this was easy.Whether you like ice cream cones or just right out of the bowl doesn’t matter this ice cream is so good however you choose to eat it. No need for fancy toppings this has all the flavor that you need in a bowl of ice cream.

- 1 box mix of your favorite carrot cake mix (use one with raisins and real carrot for best results)
- 1 half gallon vanilla bean ice cream
- make cake mix according to directions in a 9x13 pan
- let cool completely
- while cake is cooling bring the ice cream out of the freezer and let soften
- once cake is cool crumble into a large mixing bowl
- add softened ice cream to bowl and mix to combine
- put ice cream mixture in a loaf pan and wrap tightly with plastic wrap
- place in the freezer for 3 hrs
