I have all of you to thank for that!

It was so successful that Chobani even saw the recipe! They liked it so much they reached out to me to let me know that they liked my work and would I be interested in creating more recipes with their yogurt?  Well that was a no brainer……

So here is my first creation in a long list of yummy treats! Blackberry Oatmeal Muffins.  Perfect portable healthy breakfast!

Mornings can be quite hectic in most households.  Ours starts very early here and we are usually walking around like zombies! Having a habitual order to the day helps keep us on track.  The one thing we almost always forget or don’t have time for is Breakfast.  Forcing us to go hungry til lunch or jamming unhealthy choices down our throats.  Sugar rush then coffee crash and burn at 9am.

Not Good!

I have been trying to get our breakfast ready the night before so we can grab healthier choices.  That is where the inspiration for these muffins came to be.  While we were spending a lovely morning at the City Market I was brainstorming recipe ideas to make with all the wonderful yogurt that Chobani sent me.  I love the Farmers market with all the fresh and abundant veggies and fruit!  I saw a beautiful bunch of Blackberries.

There is was.  The light bulb went off and this recipe started to take form in my brain.

I had to make sure that they were healthy and delicious.  Sometimes that can be a tall order.

That is where Chobani Greek Yogurt comes into play.  The Vanilla Yogurt is a bakers best friend.  It makes baked goods bake up light and fluffy and keeps the muffin nice and moist. Just look how great these muffins look.  As a healthy breakfast these muffins really deliver.  You get a serving of protien with the Greek Yogurt baked in and instead of the whole recipe using white flour, it has ground oatmeal to make oat flour.  This will help fill you up for longer and keep your blood sugar more stable.  No more Crash at 9am!

So you can bake up a batch of these and know that as your family runs out the door with muffin in hand you are setting them up for a great day with a healthy breakfast.

Blackberry Oatmeal Muffins

This is a Plaid and Paisley Original Recipe

Ingredients

  • 1 2/3 cups oats before grinding
  • 2/3 plus 1/2 cup AP flour
  • 3/4 cup packed brown sugar
  • 1 tsp each of Baking Powder and Baking Soda
  • 1/4 tsp salt
  • 1 cup Chobani Vanilla Greek Yogurt
  • 2 eggs
  • 1 cup Fresh Blackberries halved. {if you use frozen be sure to drain very well first}
  • 1/8 cup each of sugar and whole oats for sprinkling

Instructions

  • Preheat oven to 400
  • grind oats in a food processor
  • in a mixing bowl add the oat flour and 2/3 cup AP flour
  • mix in the brown sugar, baking powder and soda, salt
  • then mix in the yogurt and both eggs
  • the batter will be very lumpy
  • add in the last 1/2 cup of flour
  • fold in the blackberries
  • fill muffin tins lined with papers 2/3 full
  • in a small bowl combine the sugar and whole oats
  • sprinkle even amounts on each muffin
  • bake for 20 minutes
  • Enjoy!!!
